2. Light, Fluffy Meringue

If you have grease on the beaters or in the bowl, the fat will make it harder to achieve the right consistency.

Also, make sure you use the finest sugar possible and add it only after the egg whites have been whipped until they form soft peaks. Adding sugar too early won’t give you the desired result.

4. Puff Pastry

Puff pastry is another hands-on recipe that takes quick work and even faster thinking. It’s where expert pastry chefs excel and where many inexperienced bakers fail, but it’s possible to master this recipe. The key is in the butter. The butter must be cold, but still malleable. Pounding the butter until it’s pliable is the secret.

5. Savory Soufflés

Creating a scrumptious soufflé is difficult, but not impossible. It comes down to how you treat the egg whites. Over or under-beating leads to a collapsed dish — a true failure. But just the right amount of hand beating creates an airy, towering finished product — success!

6. Marvelous Macarons

The macaron is a delicate French sandwich cookie that’s unmatched in taste and appearance. Two key factors contribute to the success of a macaron-making session: how you fold the dry mixture into the egg whites and the accuracy of your oven’s baking temperature.
